Friday Five

This weeks 'Friday Five' has a Spanish theme as I am off on holiday tomorrow! I cannot wait to chill out, eat lots of yummy food and go for runs on the beach with my boyfriend. But first I really must finish packing....

1) Let us start with a gorgeous Gazpacho from Barefoot Contessa So perfect for a summertime lunch

2) Ok so technically pizza is not Spanish but this Romesco Pizza With Caramelized Onions & Squash from PPK has just enough of a Spanish influence to be included


3) Traditional, classic and pretty simple- Spanish Rice from Manifest Vegan 


4) This would not be a Spanish theme if we didn't throw in some tapas! Vegangela has some great Vegan Tapas Ideas 



5) This Spanish Lentil and Mushroom Stew from Fresh and Foodie  is healthy and will be great at any time of the year

Keep on running......

I am feeling so unmotivated at the moment. I have spent the last 6 weeks getting prepped for my holiday and then the last few weeks I have just lost all interest. Does this happen to anyone else?

Anyway, I am getting tired of my usual work out routine and really need to switch things up to get myself refocused. The only problem is deciding what to do. I know that I need structure in order to stick to anything so I have been looking into different classes (bikram yoga, spin) but they are just so expensive- especially if you want to work out 3-4 times a week. So I have decided to start running again. I have run in the past and I do enjoy it once I convince myself to get out of the house!

I am going to follow this schedule which is for 8 weeks and see how I get on. But before I begin I am (of course) going to do some imaginary online shopping to find a few new items to inspire my new regime....

I would love to hear more about your workout regimes...do you need structure or get bored easily. Any tips will really be appreciated! Also- does anyone else make imaginary online shopping lists?!

Current Obsession

One of my hobbies is to look into other peoples fridges when I go into their homes. I know it is weird and slightly passing boundaries but I just cannot help myself! I am not even hungry most of the time, I just like having a peek to see what is going on in there.

So as you can imagine, I was so excited to stumble upon this feature on the Well and Good NYC website. Refrigerator Look Book gives us a sneak peek into the the eating habits of a variety of different people and it is so interesting and totally addictive. You can also pick up some really useful and super healthy tips.

Friday Five

Here is a selection of my fave recipes from various blogs. I hope they inspire you this weekend!

1) I am always looking to jazz up my lunch salads and these Nearly Raw Layered Veggie Bowls look so fresh and yummy.


2) Apparently it is going to rain on Sunday so I am planning on getting all my errands done early in the morning so I can make the  Best Ever Vegan Mac & Cheese and watch E! all afternoon! This will be my first attempt at making this so I hope it goes well.


3) Ok so I confess that I will not be making this at the weekend and yes Christmas is pretty far away but this Truffled Mushroom and Chesnut Wellington needs to be printed out ready for December!


4) I always stick to green smoothies for breakfast during the week so these Breakfast Quinoa Muffin Clusters really are a weekend treat (and guilt free!)


5) Last, but by no means least....a naughty weekend treat. Peanut Butter Blondies....come on we deserve it!
